Peanut Butter Chocolate Chip Cookies

I have good news and bad news for you. If you are anything like me you will want to hear the bad news first getting it out of the way quickly, followed by the good news to ease the pain of the former.
So here goes, the bad news first. These cookies are no good warm out of the oven. They aren’t good the next day either. Throw out no good, but I didn’t have time to do the unpleasant task of trashing them.
Now the good news-on their way to the trash can this morning, I was lured by a chunk of chocolate chips at the edge of one of these cookies, eating it while sipping a cup of hot coffee. They were good. No, they were very good and worth keeping.
Who ever heard of a cookie that goes from bad to good in three days? Isn’t it supposed to be the other way around? My only word of caution is, when making them please note that the mixture is sticky as you roll the dough into balls. The desire to add more flour is overwhelming. My words of wisdom don’t. It seems as if the dough can handle it, when in fact the addition of more flour- by yours truly stopped them from being a great cookie on the third day.
My plan was to leave you with the bad news, no recipe and a sincere heartfelt apology for the cookie letdown. Instead, I leave you the promise of a recipe this evening as I am late for work. If you try them; I hope you have the patience to wait three days to eat them.

OMG I can’t believe hey are not good for 3 days. That’s hilarious but how on earth would I be able to wait. It’s makes we want to make them wondering if I could wait. Hmmmmmm?

and i love that you used the traditional criss-cross pattern. a peanut butter cookie isn’t a peanut butter cookie ’til it’s there.
