Fig Ice Cream with Peanut Brittle

Sometimes sitting down to write leaves me at a loss for words, today is one of those times. It has been a tough week in particular for my husband with the passing of his sister. Rightly so, the week has been filled with laughter, tears and all that accompanies the loss of a loved one.

My passion for figs can’t even seem to nudge or prod the words from my brain.

So today- I simply leave you with a few images of fig ice cream and peanut brittle.  This was a snap to make, as I used my favorite vanilla base from David Lebovitz’s cookbook- The Perfect Scoop, and improvised on the fig part. Visit David for the recipe on peanut brittle and any other imaginable treat you might crave.

Since David is an ice cream genius; I also used his recipe for the Peanut Brittle. My plans to make pistachio brittle were thwarted by- not so good pistachios.

Hence, plan B came in and the fig ice cream was topped with peanut brittle instead. Not to shabby either as it didn’t take long for the non-fig lovers to devour the peanut brittle. This ice cream was better after it sat a day or two which allowed the full flavor of the figs to come through.

If you are passionate about figs like I am, this is definitely an ice cream to make. Just make sure your figs are ripe and full of flavor. The antique ice cream scoop in the image is the cause of a huge riff between my sister and I; but that is a another story and another recipe to share- when the words to write come easier.

    I am a lover of figs and this recipe sounds magnificent! I just posted a fig recipe last week. My father loves figs and peanut brittle so I think this is a must when he visits.

  7. I love Fig Ice Cream, but never thought of topping it with nut brittle. We have figs. We have pistachios. This needs to move to the top of the recipe stack!

    You know, I still haven’t had figs! I can’t find them. I have been wanting to make a sauce for duck breasts with them. Still searching.

    Peanut brittle is one of my most favorite things in life. I have loved it since I was a kid. I think it was second only to rock candy!

    Secondly, I’m lusting after this ice cream. I love figs, have loads of them, and to combine it with peanut brittle was genius. Add to that DL’s vanilla ice cream base, and what a winner!

  21. I am really sorry to hear about your husband’s loss and yours at the same time. Losing a sibbling is something I have experienced and never want to have my husband go through the same thing.
    This lovely ice cream topped with the brittle could certainly be some balm to a wounded heart.
