Cornmeal Crab Puffs

Even though I am not opposed to family or guests eating and running-especially when they run satisfied and content. I on the other hand, don’t feel good about eating and running. But another busy week has left me short on time and I must eat and run today.

Frankly, this is a good eat and run snack as you could roll them up in a parchment lined newspaper cone heading out the door content and then some. So I leave you with a recipe along with a few words that about these crab filled morsels; golden with a crusty outside, moist chock full of crab on the inside. This is a twist on the Southern Hush puppies which we will talk about more in the weeks to come. Southern cooking at it’s finest once again.

For now enjoy these without further comment from me as I head to work. So, sorry I had to eat and run.

Cornmeal Crab Puffs

2 cups of stone-ground cornmeal( I like to use white, but yellow will do)

2 tablespoons all-purpose flour

1 1/2 teaspoon baking powder( preferably homemade)

1 teaspoon kosher salt

1/2 lb lump crab meat picked through for any shells

1/2 finely chopped onion

2 eggs lightly beaten

1 1/2 to 2 cups of milk

Oil for frying

  • Prepare dry ingredients in a large bowl.
  • Add the chopped onion and mix till combined.
  • Add the eggs and milk blending till mixed.
  • Gently fold in the crab meat so that the lumps do not break up.
  • Heat a pan with about 2 to 3 inches of oil till it reaches 340 degrees.
  • Drop by heaping teaspoon and fry till lightly brown about 2 minutes then turnover and fry the other side till lightly brown about 1 minute.
  • Drain on paper towel and serve warm with cocktail sauce of ketchup and horseradish.

  8. Kim we must be on the same wave length! My husband came home the other night with a hush puppy in his hand, he said …Do you know what this is?? I looked at it and said no, he said it’s a hush puppy can you make me some, then popped it in his mouth. I said well, I can try honey. the crab puffs! I know he’s gonna love these!! I sent for the cookbook by Virginia Willis, I can’t wait to get it!!
