Marinated Summer Vegetables

I realize that it is not summer yet, but then by the time I got around to sharing this recipe with you last year-summer was over. So this year, I decided to get a jump on things and share this incredible easy and delicious way to harvest fresh veggies before they go out of season.

This is so easy to make, that I don’t even have a recipe for you. I can hear the protests now, but trust me. If you can make a simple vinaigrette, then you can make any combination of marinated vegetables that you have on hand or find at your farmers market. Grab some fresh herbs and experiment with vinegars and have some fun.

I blanched my vegetables for a few minutes, keeping them crisp. Basil for the tomatoes, fresh thyme for the potatoes, and mint with jalapenos for the carrots and red onions. The veggies keep fresh sealed in glass European canning jars for weeks. That is if your veggies last that long.

All that you need for a simple fun meal, is some fresh homemade ricotta, goat cheese or mozarella and a hearty loaf of French bread and you are set for a fabulous meal. I never heard so many sighs of content from a group of adults hovering over the kitchen island while eating their veggies.

So grab a basket and head to your local market or visit your local farmer and have some fun-and then head back here to share your favorite veggie combo.
